Arabian Sunrise Mocktail Recipe

An exotic and powerful over-night infused mocktail, bringing together traditional chai flavours from Asia with the honey-like sweetness of our ultra-rare wild Caucasian safflower, a popular Middle East flavour. This mocktail has been designed to look as beautiful as the sun rising over the Arabian Desert.

Recipe for 6-8 cups

Ingredients

10g   Nazani Tea safflower

16     Cardamom pods

16     Peppercorns

16     Cloves

20g   Peeled ginger

1       Cinnamon stick

1L     Sparkling ginger ale

1L     Spring water

Method

Place the safflower, cardamom pods, peppercorns, cloves, peeled ginger and crushed cinnamon stick into a teapot (with a strainer), cafetiere, or boiling pot.

Boil the water and pour into the teapot, cafetiere, or boiling pot.

Cover the teapot, cafetiere, or boiling pot and leave to infuse for as long as possible. Overnight infusions of 7-10 hours are encouraged but not necessary, as long as the mixture has cooled down naturally and no ice has been added in the process.

To create your mocktail strain 125ml into a highball glass and add 125ml of sparkling ginger ale. Serve with ice.
